Cut and Marinate the Chicken

Take chicken thighs and cut them into long strips. Each piece should be at least one inch thick and a few inches long. Put the chicken pieces in a bowl. Then, add 1 tsp light soy sauce, 1 tsp oyster sauce, 1 tsp cornstarch, and 1 tsp oil to the chicken. Mix everything well and set it aside.

Fortunately, you just need to chop Gai Lan and garlic for this recipe. Mince the garlic cloves. Then, separate the leafy part of the Chinese broccoli from the stem. Slice the stems diagonally and then chop the leaves.

Step 3: Make the Sauce

Make the Sauce

I have created a separate list of ingredients for the sauce. Take a small bowl and combine all the above-mentioned ingredients. Stir well until everything is mixed properly.

Step 4: Cook the Chicken

Cook the Chicken

Heat the wok and put about 2 tbsp of oil in it. Once the oil starts smoking, put the marinated chicken into the wok and stir-fry it for about five minutes. When the chicken is about 80% cooked, take it off.

Step 5: Cook the Veggie and Eggs

Cook the Veggie and Eggs

Put another 1 tbsp of oil into the wok and throw in the minced garlic. Then, add the broccoli stems first. After a few minutes, add the leaves as well. Once they are soft, move them aside and scramble two eggs in the same wok.

Step 6: Cook the Rice Noodles

Cook the Rice Noodles

Cut the rice noodles into thick strips and separate the sheets. Then, put the sheets in hot oil and pour the sauce you made earlier. After cooking them for a few minutes, add the cooked chicken and broccoli. Stir-fry them for a few minutes and you’re done!

Do’s and Don’ts of the Recipe

I have some useful tips for you to make the cooking process simpler. Follow these tips.

Do’s

  • If you want your Pad See Ew to be spicy, add a few sliced red chilies.
  • Try to slice the broccoli stems thinly. It will reduce the cooking time.

Don’ts

  • You don’t need to use salt for this recipe. Soy sauce already has enough salt to season the dish.
  • Don’t cover the wok while cooking the chicken or the veggie. Stir-fry them over high heat to get maximum flavor.

Can I Use Other Meat to Cook Pad See Ew?

Of course! You can use beef, pork, or any other meat to make Pad See Ew. Beef gives a bold flavor to the dish. You can even use seafood for this recipe to bring variations in the flavor profile.

Is It a Must to Use Boneless Chicken Thighs for Pad See Ew?

It’s not like that, but I recommend using boneless chicken thighs for this recipe. Bone-in chicken thighs might take longer to cook and they are more difficult to eat. Boneless thighs are packed with flavor and cook quickly. They are also easy to eat. Another good option is to use boneless chicken breasts.

What Other Seasonings Can I Use for This Recipe?

You can use a variety of other seasonings, such as chicken bouillon, chili oil, etc., to make your Pad See Ew recipe more flavorful. Red and green chilies also go well with these stir-fried noodles.

Can I Store Pad See Ew in the Fridge?

Of course. You can store Pad See Ew in the fridge and reheat it when necessary. But I recommend making it fresh because freshly made Pad See Ew is so filling and satisfying.
