Do’s and Don’ts of the Recipe
The flavor and texture of the fried wings can be ruined if you don’t follow these tips.
Do’s
- Marinating the chicken wings for long enough is important. If possible, marinate the wings for a longer period. It will help them absorb more flavors from the seasonings.
- Adding cornstarch and flour mix to the wings for the second time reduces the amount of moisture on the surface and makes the wings crispier.
Don’ts
- Never fry too many wings together. In an overcrowded pot, the wings will become soggy. Fry them in batches.
- After frying the wings, don’t consume them directly. Place them on a wire rack to let the excess oil drip.
Is Farm-Raised or Country Chicken Wing Better for this Recipe?
Both types of chicken wings have their pros and cons. Farm-raised chicken wings usually have more meat, so they turn out more tender and juicier. As the meat-to-bone proportion is high, these wings are more filling.
However, country chicken wings have a better flavor. As free-range chickens eat a variety of food, their meat is more flavorful than farm-raised chickens.
Do I Need to Fry the Chicken Wings Twice?
Some recipes tell you to fry the chicken wings twice to have a better crisp. In that case, you need to fry the chicken wings at a lower temperature first. Then, you have to fry the wings again at a higher temperature to bring the perfect crunch.
But this recipe doesn’t require double-frying the wings. Once the chicken wings are marinated and coated properly, you can fry them just once and they will become crispy enough.
What Oil Is Best for Frying Chicken Wings?
You can use a wide variety of oils for fried chicken wings. However, the best oil in my opinion is canola oil. This is a neutral oil, so it doesn’t have any flavor of its own. If the oil is flavored, the chicken wings may absorb some of the flavor while frying them.
So, the original flavor of the fried wings will be altered. I recommend using any neutral oil for this recipe.
Which Dipping Sauce Is the Best for Fried Wings?
It depends on personal preferences. Some people love to dip their fried wings into mayonnaise, while many others opt for a honey mustard dip. I usually make a homemade dipping sauce by combining ketchup, mayonnaise, and yellow mustard paste.
You can also add honey, sesame oil, etc., to the dipping sauce to make it more flavorful.
