Chinese Bhel Recipe

Chinese-style Bhel has a unique appeal, quickly winning over those who try it. When I made it for the first time, I was immediately hooked. The combination of fresh vegetables and crunchy noodles creates an ideal snack. While Chinese Bhel isn’t the healthiest option due to the deep-fried noodles, the raw vegetables and beetroot help to balance it out.

If you’re planning to make this delicious Chinese-style Bhel, be sure to follow the steps carefully. I’m sharing the recipe I recently prepared, with one important tip: don’t store it for too long. The wet ingredients can cause the noodles to lose their crunch. Now, let’s dive into the recipe.

Step 1: Prepare the Noodles

Prepare the Noodles

Begin by boiling the noodles in a large pot of water. Boiling the noodles can take up to 4 minutes. Once the noodles are cooked, immediately drain the hot water using a colander or strainer and run the drained noodles under cold water for a few seconds.

At this stage, transfer the cold noodles into a bowl and coat them with 1 tbsp of oil then sprinkle the all-purpose flour evenly over the noodles. Toss them gently to ensure the flour coats the noodles well. Why use oil and flour? Well, the flour helps in making the noodles crispy when fried.

Step 2: Fry the Noodles

Fry the Noodles

Now it is time to fry the noodles. Heat 1 ½ cups of edible oil in a deep frying pan. When the oil is hot, add the floured noodles and fry them until they turn golden brown and crunchy. Use a colander scoop strainer to remove the fried noodles from the oil.

Step 3: Prepare the Vegetables

Prepare the Vegetables

While the noodles are cooling, let’s prepare our vegetables. Shred the green cabbage, purple cabbage, and boiled beetroot one by one using a universal Grater. Let’s keep them aside in separate bowls.

Now take scallions and cilantro and finely chop them. These will add freshness and a burst of flavor to the dish.

Step 4: Assemble the Chinese Bhel

Assemble the Chinese Bhel

We are near to the end. In a large mixing bowl, combine the shredded green cabbage, purple cabbage, boiled beetroot, chopped scallions, and cilantro. Mix them well.

Now, sprinkle the Maggi Masala, Schezwan chutney, Maggi ketchup, salt, pepper powder, and freshly squeezed lemon juice. Mix them well. In the middle of mixing, add the crunchy fried noodles to the mixture.

Mix them more until everything mixes well. Gently toss everything together to coat the noodles evenly without breaking them too much. Now it is ready to serve and enjoy.

There are some parts of the recipe where you need to follow some strictness. Avoiding them will damage the main taste of Bhel.

  • Chinese Bhel is best served fresh, right after mixing, to retain the crunchiness of the noodles.
  • You can add other vegetables like julienned carrots, bell peppers, or onions for additional flavor and texture.
  • If preparing in advance, keep the fried noodles and vegetable mixture separate. Combine them just before serving to avoid soggy noodles.
